We all love inviting friends and family to our homes during the festive season to share a meal. But the cost can get out of hand and we’re all feeling the pinch this year with the rising cost of living. To help keep enjoying nutritious meals with our loved ones these holidays, we’ve created a delicious and budget-friendly Christmas lunch menu for less than $10 per person.

Couscous Chickpea Salad  $1.34 per serving* (for 8 people)

Chickpeas are not only a great source of protein and fibre but are also the perfect companion to the main. This salad can be served either warm or cool and keeps well in the fridge. 

Please note: this recipe serves eight people. If you don’t eat it all on the day, package the salad in an air-tight container and save it for a nutritious Boxing Day lunch.

 

Lemon & Herb Roast Chicken with Veggies  $5.74 per serving * (for 4 people)

The star of the meal, our Lemon and Herb Roast Chicken with Veggies will delight and fill bellies all around the table. Best of all, it will only take 90 minutes to prepare – not all Christmas morning!

Hot tip: Mix things up by using whatever veggies are on special (e.g. sweet potato, carrot, zucchini).

Tell your guests to leave room for dessert because they will not want to miss out on a slice of this! If apricot is not your jam, swap it out with any other canned fruit in this recipe.

Serving suggestion: For individual servings, bake in four small 1-cup capacity ovenproof dishes for 25 minutes.

 

Strawberry & Mint Sparkling Water  $1.58 per serving* (for 4 people)

Add to the festive cheer and keep your guests feeling fresh and hydrated throughout the afternoon with this strawberry and mint water recipe that all ages can enjoy.
