Ingredients

  • 4 potatoes, washed

Method

  1. Preheat oven to 200°C (180°C fan forced).
  2. Place potatoes in an ovenproof dish and cook for 50 minutes, or until tender.
  3. Make 2 cuts in an ‘X’ shape, across the top of each potato.
  4. Carefully open out halfway to the base, flattening slightly to hold open.
  5. Fill with desired filling.


Optional fillings (place selected filling inside potato, cook in oven for 8-10 minutes until warm)

Low-fat grated cheese and chopped tomato

No-added-salt baked beans

Can tuna in spring water drained with drained no-added-salt canned corn kernels


Healthy tip!

Try mustard instead of mayonnaise to add extra flavour to your salads and sandwiches.

    Yummy and can fill with multiple options. We like to microwave them too but oven cooked is just as good

    Delicious, quick, & easy! I microwaved the potatoes (pierced all over with a fork first) with a little water in a potato cooker for 12 minutes - even quicker! Healthy AND satisfying.
