Healthy Nectarine & Berry Salad Recipe
                        Ingredients
- 4 nectarines, stoned and sliced
 - 250 g strawberries, hulled
 - 1/4 cup mint leaves, stalks removed
 - 250 mL orange juice
 - 1/4 tsp vanilla essence
 - 1 tbs caster sugar
 
Method
- Toss fruit and mint together.
 - Combine orange juice, vanilla essence and caster sugar in a small saucepan and stir over low heat until sugar has dissolved.
 - Increase temperature and simmer for 5 minutes. Remove from heat and cool.
 - Pour dressing over fruit and chill. Serve cold.

                        Variation: Use canned peaches if nectarines are not in season.

    Very easy and very refreshing, i used maple syrup instead of sugar
