Healthy Raisin Toast With Fruity Ricotta Topping Recipe
Ingredients
- 4 slices raisin toast or fruit bread
- 1/2 cup reduced-fat ricotta cheese
- 2 tsp honey or strawberry jam, optional
- 1/2 tsp ground cinnamon
- 1 banana, sliced
- 125 g strawberries, hulled and sliced
Method
- Toast the slices of fruit bread.
- Mix ricotta with honey or jam in a small bowl.
- Spread toast with ricotta mixture and sprinkle with cinnamon.
- Layer banana and strawberries on top of toast and serve.
This recipe contains 1 tsp of added sugar per serving if the optional jam/ honey is used.

It tasted pleasant and was easy to make for breakfast. I didn't have any strawberries but had lots of plums so i sliced those and used them as a substitute.The serving was too big for me so I saved a quarter of it to have for afternoon tea. I don't tend to like sweet things for breakfast so i probably should have had it for a snack in the afternoon rather than for breakfast.
