Healthy Sweet Frumpets Recipe
                        Ingredients
- 2 eggs
 - 2 tbs reduced-fat milk
 - 1/2 tsp ground cinnamon
 - 1/2 tsp vanilla extract, optional
 - 6 wholemeal crumpets
 - 1 tsp oil
 - 2 bananas, sliced
 - 1 tbs honey
 
Method
- In a large bowl, whisk together eggs, milk, and cinnamon and vanilla if using. (Hint: use the eggshell to measure the milk. Half an eggshell = approximately 1 tbs.)
 - Dip crumpets in the mixture, flipping and pressing down to completely soak with egg mixture.
 - Heat half the oil in a large non-stick frypan with. Fry half the eggy crumpets for 2-3 minutes on each side, till golden brown. Repeat with remaining crumpets.
 - Top frumpets with banana and honey and enjoy warm.
 
                        Variation: 
                This works with any kind of bread! Try sourdough, baguette or stale sliced bread.
