A sweet treat for afternoon tea!

Ingredients

  • olive or canola oil spray
  • 1/2 cup margarine
  • 1/2 cup sugar
  • 2 eggs
  • 2 cups self-raising flour
  • 3 ripe bananas, mashed
  • 2 apples, grated
  • 1/2 cup reduced-fat milk

Method

  1. Preheat oven to 180°C (160°C fan forced).
  2. Spray a cake pan with oil.
  3. Beat the margarine and sugar with a whisk until creamy.
  4. With a whisk beat in one egg at a time until they are mixed in well.
  5. Sift the flour into the mixture and stir gently.
  6. Add bananas, apples and milk to the mixture and stir until just combined.
  7. Pour the mixture into the greased pan and bake for 50-60 minutes or until just golden and a skewer inserted into the middle comes out clean.

Healthy tip!

Having a party? Serve vegie sticks and water crackers with salsa rather than high-fat chips and dips.

    I've made this a few times, including for morning tea after dragon boat training. My whole team loves it! My family does too. It's less soggy and quicker to make when I dice the apple instead of grating it.

    I used raw sugar and only used 1/4 cup and surprisingly sweet enough for me. Mine is a bit soggy, i should have followed Andrew Watts in the previous comment or add more flour ? But we still love it, the house smells amazing too.

    maybe J.O. makes this in 5mins but it takes me about 20ish... awesome cake!! Squeezing the apple gratings will reduce the liquid if your cakes are coming out too soggy..

    Made the Banana cake for the first time on the weekend and was pleasantly surprised it not only turned out but tasted good too. Very easy to make and my 16 year old son loved it.
