Healthy Roasted Capsicum Dip Recipe
                        Ingredients
- 2 medium red capsicum, cut in half lengthways, stem and seeds removed
 - 65 g reduced-fat Greek-style feta cheese
 - 1/4 cup unsalted cashews
 
Method
- Preheat oven to 200°C (180°C fan-forced)
 - Put capsicum halves on a baking tray with the skin side up. Place in the oven on the top shelf and cook for 25 min.
 - Remove baking tray from the oven and leave for a few minutes until capsicums are cool enough to touch.
 - Peel off any of the capsicum skin that pulls away easily.
 - Blend capsicum flesh, fetta and cashews in a medium-sized mixing bowl using a bar mix.
 - Serve with cut up vegies or grainy crackers.
