Healthy Choosy Chicken Salad – Middle-Eastern Flavours Recipe

Ingredients
- 1 tbs olive oil
- 1 tbs lemon juice
- 1/2 tsp dried mint
- 1 tomato, chopped
- 1/4 cup parsley, chopped
- 300 g shredded coleslaw (no dressing)
- 1 cup cooked chicken
- 2 tbs sultanas
Method
- Add olive oil, lemon juice and mint to a jar and shake well.
- Chop the tomato and parsley.
- Divide the coleslaw, chicken, sultanas, chopped tomatoes and parsley between two large bowls. Just before serving, pour half the dressing over each and mix well.
Variation:
- Swap chicken for hummus or cooked haloumi.
- Slice open a wholemeal pita bread, spread with hummus and fill with salad.
- Serve with wholemeal couscous.
