Chicken salad but dial it up! Adding some crunch, zip and fresh herbs takes this salad to the next level.

Ingredients

  • 1 tsp sesame oil
  • 1 tsp canola oil
  • 2 tsp soy sauce
  • 4 tsp white vinegar
  • 2 tbs mint leaves, shredded
  • 2 tbs fresh coriander, shredded
  • 1 cup cooked chicken
  • 300 g shredded coleslaw (no dressing)
  • 4 tbs unsalted peanuts

Method

  1. Add liquid ingredients to a jar and shake well.
  2. Finely slice or shred the herbs.
  3. Divide the chicken, coleslaw, peanuts and herbs between two large bowls. Just before serving, pour half the dressing over each and mix well.

Variation:
  • Swap chicken for flavoured cooked tofu or cooked eggs
  • Serve with steamed rice
  • Make into rice paper rolls: Carefully pour cold water onto a large plate. Submerge a dry rice paper roll sheet in the water for a few seconds. While the sheet is still stiff transfer to a chopping board. It will continue to soften. Add salad mixture to the rice paper in a line towards the bottom. When soft enough to roll, fold over two ends to enclose filling. Then roll to close final side.
  • Make into stir-fry: Add a little oil to a hot wok or large frypan and stir fry fresh noodles of choice till hot. Add the coleslaw and chicken to the wok and cook till vegies have just softened and everything is hot. Add the peanuts, fresh herbs and dressing and enjoy.
