Healthy Choosy Chicken Salad – Middle-Eastern Flavours Recipe

Ingredients
- 1 tbs olive oil
- 1 tbs lemon juice
- 1/2 tsp dried mint
- 1 tomato, chopped
- 1/4 cup flat-leaf parsley
- 2 tbs currants
- 300 g shredded coleslaw (no dressing)
- 1 cup cooked chicken
Method
- Add oil, lemon and dried mint into a jar and shake well.
- Chop the tomato and parsley.
- Divide the salad ingredients between two large bowls. Just before serving, pour half the dressing over each and mix well.
Variation:
- Swap chicken for hummus or cooked haloumi
- Serve with wholemeal couscous
