Choosy chicken salad – Middle-Eastern flavours

Get inspired by the flavours of the Middle-East. Enjoy this fresh salad on its own, served with couscous or stuffed in a warm pita slathered in hummus.

Ingredients

  • 1 tbs olive oil
  • 1 tbs lemon juice
  • 1/2 tsp dried mint
  • 1 tomato, chopped
  • 1/4 cup flat-leaf parsley
  • 2 tbs currants
  • 300 g shredded coleslaw (no dressing)
  • 1 cup cooked chicken

Method

  1. Add oil, lemon and dried mint into a jar and shake well.
  2. Chop the tomato and parsley.
  3. Divide the salad ingredients between two large bowls. Just before serving, pour half the dressing over each and mix well.

Variation:
  • Swap chicken for hummus or cooked haloumi
  • Serve with wholemeal couscous
