Healthy Savoury Frumpets Recipe
Ingredients
- 2 eggs
- 2 tbs reduced-fat milk
- 6 wholemeal crumpets
- 1 tsp oil
- 1 avocado, sliced
- 1 large tomato, sliced
- to taste pepper
Method
- In a large bowl, whisk together eggs and milk. (Hint: use the eggshell to measure the milk. Half an eggshell = approximately 1 tbs)
- Dip crumpets in the mixture, pressing down and flipping to completely soak with egg mixture.
- Heat half the oil in a large non-stick frypan with. Fry half the eggy crumpets for 2-3 minutes on each side, till golden brown. Repeat with remaining crumpets.
- Top frumpets with avocado, tomato and pepper and enjoy warm.
Variation:
This works with any kind of bread! Try sourdough, baguette or stale sliced bread.
