“Cob loaf” artichoke toasties

This toastie is a fresh spin on the comforting and nostalgic flavours of the classic party cob loaf. Delicious.

Ingredients

  • 280 g jar artichoke hearts in brine, drained and chopped
  • 2 tbs reduced-fat cream cheese
  • 2 tsp mayonnaise
  • 1/3 cup mozzarella, grated
  • pepper
  • 2 Turkish bread rolls, sliced in half long-ways
  • 1/4 zucchini, thinly sliced
  • 1 cup baby spinach leaves

Method

  • Drain the artichokes and roughly chop. Squeeze out any extra brine and put artichokes in a medium bowl. You need ½ - ¾ cup of chopped artichokes.
  • Add the cream cheese, mayonnaise, mozzarella and a good grind of black pepper to the artichokes. Mix well.
  • Slice open the rolls and spread with the artichoke mixture. Slice the zucchini, layer it on with the baby spinach and close the sandwich.
  • Toast in a sandwich press till bread is crisp and cheese is melted.

Variation:

Make this dish for a crowd! Cut a full-sized Turkish bread in half lengthways, cover with filling (double or triple quantities depending on size) and put the top back on. Bake in the oven for 10 – 15 minutes or until cheese is melty and bread is crunchy. Chop into individual portions and serve immediately.   

Healthy tip!

Try mustard instead of mayonnaise to add extra flavour to your salads and sandwiches.
